Joshua and I have been married for three years! On July 11th, Kyle and Stacy came over to watch Lily while we treated ourselves to dinner at a restaurant. We went to Watercourse Foods, a vegetarian place that tries awfully hard to replicate the taste and texture of meat with tofu, tempeh, and seitan.The food was fine, but the farce of fake meat struck me as odd. My choice to be a vegetarian does not feel like a sacrifice, and I do not consider meat to be the main star of a meal. I love the food we eat, and all of our meals seem whole and complete. Vegetables are not side dishes, and the different meals you can make with them easily keep pace with – or outdo – any carnivorous feast. The exception, perhaps, is Louisiana. Which I why I am a vegetarian in 49 states instead of 50. Louisianans know what to do with their meat, and it is sublime.
Anyway, the food was fine, but the company was great. I love this man and the life we have made together. He’s still my favorite person to be around.
